Ingredients recipe for chicken soup
1 Onion, large
1 tbsp Parsley
1 Chicken breast or left over chicken (approximately 150g – 180g), small
150 ml Skimmed milk
1 Litres chicken stock
Baking & Spices
1 Salt and pepper
Pasta & Grains
40 g Rice
1 Leek diced (green and white parts separated)
Instructions To Make Homemade Chicken Soup
Step 1. Grill the chicken breast, allow to cool and then shred / cut up finely.
Step 2. Add stock to saucepan, bring to the boil and add the washed rice.
Step 3. Add the diced onion, the white diced parts of the leek and the shredded chicken and simmer for 30 minutes.
Step 4. Add the green diced parts of the leek and simmer for a further 10 minutes.
Step 5. Add the milk, check the vegetables are tender, season with salt and pepper and add the parsley for decoration.
