2 Celery sticks
2 tsp Italian herbs
1 Italian parsley, fresh
2 Carrots, large
1 Onion, large
800 ml Plum tomatoes, canned
2 Yukon gold potatoes, small
3 Garlic cloves
2 Courgette, small
1 splash Balsamic vinegar
Pasta & Grains
1 cup Ditali pasta
Baking & Spices
1 Salt and pepper
Oils & Vinegars
1 Spray oil
2 tbsp Tomato paste
8 cups (2 litres) of chicken or vegetable stock
Instructions to make the best minestrone soup recipe
Step 1. Spray a large sauce pan with some spray oil
Step 2. Add the onions, celery, carrots and garlic and fry for about 5 mins until softened.
Step 3. Add the courgette, tomatoes (break them up with a wooden spoon), tomatoes paste, vegetable stock, Italian herbs, and balsamic vinegar.
Step 4. Bring to a boil, then reduce heat, cover and simmer for approx 45 mins
Step 5. Add in the potatoes and pasta and simmer until cooked.
Step 6. Season as needed with salt and black pepper
Step 7. Top with some freshly chopped Italian parsley

Note: When heating up the next day, you may need to add more stock, as it will thicken from the starch from the pasta/potatoes
